Inspired by. . . easy dinners

Goodness, it has been a busy couple of several days!  Doctor appointments, and follow-up appointments, and all manner of other craziness!  This is the first minute I've had to myself in over a week!  And I'm spending it with you {smile}.

As I was making dinner last night, one of my all-time favorite dishes, I wondered if I'd ever shared the recipe here on the blog. After a quick search, I was surprised to find that I had not.

Now after working with the pictures I took last night, I think I may know why.

 

Artichoke_Chicken

 

It's not the most appetizing looking meal. Trust me. It tastes much better than it looks!

 

Artichoke Chicken

Ingredients:

1 (15oz) can artichoke hearts

3/4 cup grated Parmesan cheese

3/4 cup mayonnaise

1 pinch of garlic pepper (or Penzey's Shallot Pepper)

4 skinless, boneless chicken breast halves

Directions:

1. Preheat oven to 375 degrees F (190 degrees C)

2. Drain and chop artichokes

2. In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic pepper. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.

3. Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.

 

That's it. That's all. Easy-peasy, right? Right!  I do have a couple of side notes to share.  I pound my chicken to a thickness of about 1/4 inch before placing it in the baking dish. Also, I don't add the garlic pepper (I actually use Penzey's Shallot Pepper) to the mixture.  I sprinkle it over the chicken before covering the chicken with the artichoke mixture. Finally, using real Parmesan cheese does make a difference!

So here it is...

Inspired by... pieces of me

 

It's scavenger hunt week over at Kim's Beyond Class and I'm inspired to play along. 

 

It's going to be a busy week, and photographing these prompts may be all I have time to post!

 

Here's a look at the inspiration behind the hunt:

 

My name is Kathy McDonnold. I am a 46 year old mom, wife, daughter, friend and owner of 3 min pins and 2 siamese cats. When my girls were born I started scrapbooking. One day I noticed a lady making a "Pieces of You" page. I loved this idea because she was using the cropped discards from the photos she was putting in her scrapbook. We often cut out the background noise in our photos that also show pieces of our lives, for example, a mailbox, a car etc... The other day I had several ideas come to mind and remembered the lady's scrapbook page. This prompted me to send Kim an email. I would love to see pieces of your lives.

 

So, I'm sharing "pieces" of my life this week.  I hope you enjoy the fun!

Inspired by... peace

 

Peace seems as elusive as hope in our world today. Wars and rumors of wars. Public shootings. Economic uncertainty.

Where do you find your peace?

In a quiet, removed existence? relationships? power? Perhaps prestige or material possessions bring you a sense of security and peace?

 

"These things I have spoken to you, so that in Me you may have peace.

In the world you will have tribulation, but take courage; I have overcome the world." John 16:33

 

One way I receive His peace is through nature.  Because I recognize that every beat of the hummingbird's wing is measured by our Creator.

The last seven months of my life have been a time of change. Painful change and uncertainty.

Jesus gives freely to all who ask.

Inspired by... twins

 

Two are better than one, because they have a good reward for their toil.

For if they fall, one will lift up his fellow.

They say twins are double the work fun and I know a pair who live up to that adage!  To make things even more fun, they just had a birthday!  And, of course, birthdays mean CAKE!

Twins share so much, the same, together, I thought it would be fun to make each of them their own cake.

I have these wonderful memories of my Nana and her little cake book. It was about 4" x 5" and filled with cakes of all different, wonderfully fun shapes!  Fish and cars, horses and ladybugs! All made from your standard sheet cake. Her little book showed you how to cut the cake into these magical shapes and decorate them with fun colors and candies.

I wish I still had that little book. It's probably long out-of-print by now. But I do have Google! And, although it doesn't have the sentimental value of that little book, it gets the job done!

Betty Crocker comes through with a recipe-packed website, great pictures and easy recipes.  I found recipes/instructions for both my cakes there and am already eyeing her princess cake for next year!
