Inspired by... easy dinners

 

I haven't posted a recipe in awhile... how about some meatloaf?

I have to tell you, I'm not a big "beef" fan, {I realize, living in Texas, that I'm taking my life in my hands by admitting such a scandalous truth...} but this little loaf turned out mighty tasty!

Adapted from a recipe on allrecipes.com, let's see if I can remember what I did...

 

Sweet Onion & Garlic Meatloaf

Ingredients:

1/2 cup ketchup

1/3 cup brown sugar

1 T lemon juice

1 tsp mustard powder

2 lbs ground beef

1 cup bread crumbs, Italian style

1 can sweet onion & garlic diced tomatoes, well drained

1 egg, beaten

1 bouillon cube, crushed

 

Directions:

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a small bowl, combine the ketchup, brown sugar, lemon juice and mustard powder.

3. In a separate, large bowl, combine the ground beef, bread crumbs, diced tomatoes, egg, bouillon and most of the ketchup mixture (leaving just enough in the bowl for spreading on top of the loaf).  Mix well and place in a 5x9 loaf pan.

4. Bake at 350 degrees F for 1 hour, then drain an excess fat, coat with remaining ketchup mixture (add more ketchup if needed) and bake for 10 more minutes.

Slice, and serve up with your favorite sides!  Don't forget the leftovers.  This made a great sandwich the next day!

Inspired by... gifts

 

Do you ever find yourself saying, "If we can just get through this, then..."

I knew a Pastor who used to say, you're either just coming out of a trial, in the midst of a trial, or getting ready to experience a trial.

In this life I have found that calm, quiet moments are a gift. When they do happen, I make a purposeful attempt to open all my senses to the reality around me. To capture everything about the moment.  What I'm seeing, smelling, hearing.

Why?

As I said, these moments are a gift. God's gift to me {and you} to draw on, to remember His calm, His peace, when my life {day, week, year} is anything but.  During unsettled or stressful times, I can recall the peace of the sunlight filtering through the trees on a late, lazy afternoon. The JOY of watching butterflies flit among the thistles or the overwhelming majesty and awe of the evening sky as it turns to molten lava.

If God is in those things, the quiet, peaceful, awe-inspiring moments,then surely He is there, present with me, during the trials and tribulations of life.  Remembering this truth gives me hope and strength. Being mindful of Him and His ways gives me wisdom and understanding.

About 10 days ago, a big rainstorm came through here.  We got about 5 inches of rain in 30 minutes.  Pretty intense.  When these pictures were taken the water had already subsided about four feet.

During the storm, the water was up over the bridge you see in the upper right-hand photo.  The rain came down so hard and so fast that it washed out nearly all of our roads.

Even the fire trucks got caught between wash-outs.  As much as we needed the rain, it was hard not to be discouraged from all the damage.  It will be costly and time consuming to repair.  It's tempting to say, "If we can just get through this... then," and ignore what God is doing in the midst of the situation. 

His purposes are always at work. To teach, grow, mold... us. 

Me.

I think most of a lot of time, I simply miss it.

I miss the lesson.  I miss what He's trying to show me.  So, He tries again.  With a different set of circumstances, to show me, mold me, teach me, grow me.  And along the way, there are those little gifts that remind me of His infinite goodness.

Inspired by... light

 

Can you imagine our world without light? Even on the darkest, stormiest day, the sun is shedding it's light upon our world. Nourishing us with life-sustaining nutrients. Our earth can't survive without it.

Of course, there are other sources of light.

The moon can be magnificently bright at times. There is something serenely magical about walking in the moonlight.

And what about fire? The people in Colorado and other places can certainly attest to it's destructive force. But have you ever noticed how the lighting of one small flame immediately chases away the darkness? Light a candle in a darkened room and you'll see what I mean.

Light is powerful.

 

Light

 

Is there something in your world that is dark today? Maybe something you've done, or something that's been done to you. Something that's stealing your JOY, causing you to FEAR. A decision you have to make, a burden you're carrying.  Do you feel alone? ashamed? abandoned?

Be encouraged, there is a Light greater than the sun that can deal with ANY darkness you're facing today, or will face tomorrow.

 

Jesus spoke to them, saying, “I am the light of the world. Whoever follows me will not walk in darkness, but will have the light of life.”  {John 8:12}

 

In Him was life, and the life was the light of men.  The light shines in the darkness, and the darkness has not overcome it. {John 1:4-5}

 

Jesus is real.

He loves you.

And He's bigger than whatever you're facing.

He'll chase away your darkness...

 

...if you ask Him to.

Inspired by. . . appearances

 

"Objects in mirror may be closer than they appear."

One of my favorite scenes from Jurassic Park is when T-rex is chasing down the jeep. As the camera zooms in on the side mirror, you see his terrifying jaws framing the above words.

When Pixar repeated the scene in Toy Story with Rex (who is definitely NOT terrifying), I found it hilarious.

Point being: things are not always as they appear.

I've always tried to be very careful about judging based on appearances.  Many times people and circumstances are just what they appear to be.  But just as many times they are not.  Sometimes in life we find ourselves in situations we never dreamed of or wanted.  It's especially difficult if you're going through something you can't share or fully explain to those around you.  Especially when the circumstance reflects poorly on your witness for Christ.

It's important to seek Godly counsel, stay grounded in the Word and let God be your judge.  Trust and rely on what He says, not what others may, or may not think about your situation.

God often uses trials to bring us closer to Him.  To soften our hearts and make us more compassionate to others.  If you're going through a difficult time, I challenge you to try shifting the focus off your issue and consider what God might be doing.

Is He molding you? growing you? repairing you?

 

I am the true vine, and My Father is the vinedresser. Every branch in Me that does not bear fruit, He takes away;

and every branch that bears fruit, He prunes it so that it may bear more fruit." {John 15:1-2}

 

Pruning is never pleasant, but the results are always beautiful.
