Inspired by. . . easy dinners

Goodness, it has been a busy couple of several days!  Doctor appointments, and follow-up appointments, and all manner of other craziness!  This is the first minute I've had to myself in over a week!  And I'm spending it with you {smile}.

As I was making dinner last night, one of my all-time favorite dishes, I wondered if I'd ever shared the recipe here on the blog. After a quick search, I was surprised to find that I had not.

Now after working with the pictures I took last night, I think I may know why.




It's not the most appetizing looking meal. Trust me. It tastes much better than it looks!


Artichoke Chicken

1 (15oz) can artichoke hearts

3/4 cup grated Parmesan cheese

3/4 cup mayonnaise

1 pinch of garlic pepper (or Penzey's Shallot Pepper)

4 skinless, boneless chicken breast halves


1. Preheat oven to 375 degrees F (190 degrees C)

2. Drain and chop artichokes




2. In a medium bowl, mix together the artichoke hearts, Parmesan cheese, mayonnaise, and garlic pepper. Place chicken in a greased baking dish, and cover evenly with artichoke mixture.

3. Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.


That's it. That's all. Easy-peasy, right? Right!  I do have a couple of side notes to share.  I pound my chicken to a thickness of about 1/4 inch before placing it in the baking dish. Also, I don't add the garlic pepper (I actually use Penzey's Shallot Pepper) to the mixture.  I sprinkle it over the chicken before covering the chicken with the artichoke mixture. Finally, using real Parmesan cheese does make a difference!

So here it is...




...not the best looking chicken dish ever, but definitely one of the tastiest!
